Potatoes & Ham, Two Ways

This week we have two recipes again. Each of these uses the main ingredients, potatoes and ham, and the same sauce mixture, made the same way. With the holidays and the winter cold, common dishes tend to revolve around casseroles and soups. So with that said, we have potato & ham soup along with a scalloped potatoes and ham casserole.

We used our Thin ‘n Trim Ham Steak in both recipes. With each slice being 6 oz., they were exactly the portion needed for the recipes. That, and they are a healthier option than other available hams. Who can argue with ham that is 95% fat free, with 70 calories and 280 mg of sodium per serving, without a sacrifice in flavor.

If you plan on doing both recipes in one go, it’s best to start with the casserole since it takes time to bake, so we’ll outline that first, followed by the soup.

Scalloped Potatoes & Ham Casserole (recipe page found here)

Ingredients:

• 1 package of Thin ‘n Trim Ham Steak, diced
• 2-1/2 tbsp butter
• 2 tbsp flour
• 1-1/2 cup milk (I used 2%)
• 1 medium onion, chopped
• 2 large potatoes, peeled and thinly sliced
• 1 cup grated cheddar jack cheese
• fresh parsley leaves, diced

Directions:

1. Preheat oven to 350°F. Grease a square casserole dish.
2. Heat 2 tbsp. butter in a saucepan. Stir in flour and whisk for 1 minute.
3. Remove saucepan from heat and whisk in the milk.?

4. Return pan to heat and bring to a simmer. Continue whisking. Once the sauce has thickened, remove from heat. Season with salt and pepper.
5. In a small skillet, melt 1/2 tbsp. of butter. Add onions and cook about 2-3 minutes until translucent and golden brown. Remove from heat and set aside.
6. Spread 1/3 of the milk sauce in the baking dish.?Layer half of the sliced potatoes.

7. Taking half of the onions, add a layer on the potatoes.?Add a layer of half of the diced ham.

8. Spread out 1 cup of the cheddar jack cheese and add another 1/3 of the milk sauce.
9. Repeat the layering of potatoes, onions, ham, and cheese. Pour the remaining milk sauce on top.
10. Bake for 50-60 minutes until golden.

11. Serve topped with diced parsley leaves.

Potato & Ham Soup (recipe page found here)

 

Ingredients:

• 1 package of Thin ‘n Trim Ham Steak, diced
• 3-1/2 cups of potatoes, peeled and diced
• 1/3 cup celery, diced
• 1/3 cup onion, diced
• 3-1/2 cups water
• 2 tbsp reduced sodium chicken bouillon granules
• salt and pepper to taste
• 5 tbsp. butter
• 5 tbsp. all-purpose flour
• 2 cups milk (I used 2%)
• scallions, diced

Directions:

1. Combine ham, potatoes, celery, onion, and water in a pot.
2. Bring to a boil and cook over medium heat for about 10-15 minutes, until potatoes are tender.
3. Stir in chicken bouillon. Add salt and pepper to taste.
4. In a saucepan, melt the butter over medium heat. Whisk in the flour for about 1 minute.
5. Remove from heat and whisk in the milk. Return to heat and bring to a simmer, still whisking.
6. Continue stirring for about 4-5 minutes until the sauce has thickened.
7. Add the sauce into the pot and cook the soup for a few more minutes, until heated through.
8. Serve topped with diced scallions.
